Project 1 focuses on the development of the edible film material.Design and cooking are two of Steffi’s greatest

passions. Over the summer she was inspired by gelatin.

When boiling gelatin or agar agar, the edges of the vessel

begin to dry up and the liquid at the edges turn into a thin

plastic like material. It made her realize, what if she were

to investigate this and use gelatin to make edible sheets.

 

Over the course of two months Steffi was able to produce

various edible films. Finding the perfect balance between 

the ingredients so as to develop a consistency not too 

watery was key to creating a smooth even edible sheet. 

 

A key factor was the flexibility rate of these sheets. In 

order for designers to be able to use these sheets, it is 

important for it to be as flexible as possible so as to form

various interesting shapes.The film does not have a specific

relation to any existing material, but can at times resemble

plastic, leather or fabric. It has a glossy to semi glossy finish

and varies in textures, color, taste and aroma.
